    Spicy Blood Orange Chicken

    Spicy and sweet this juicy Blood Orange Chicken is loaded with flavor.  It's roasted in the oven with potatoes, onions, and fresh blood oranges.  It's a sheet pan, one-pan dinner!  {gluten free}

    Guys you are going to love the flavor Sunkist Blood Oranges bring to this dish.  It pairs so well with all the flavors going on in the spice rub.  The cumin adds a deep smokey flavor while the cayenne gives it some heat.   

    Boneless chicken breasts definitely have their place in the weeknight dinner line up but sometimes you just have to use bone-in chicken.  I also find that leftover chicken like this is so much juicier and can be kept in the refrigerator for up to three days.

    There are quite a few spices used in this Spiced Blood Orange Chicken but I think you'll find they are already in your pantry...

    Spices

    • garlic powder
    • ginger
    • cumin
    • cayenne pepper
    • cinnamon
    • oregano
    • salt and pepper

    Check!  I'll bet you have all those at the ready.  

    Other Ingredients

    • potatoes
    • red onion

    The Sunkist Blood Oranges add so much flavor and citrusy goodness.  It makes a sauce that I like to spoon over the chicken when I serve it.  

    Blood oranges get their name from the lovely maroon interior color.  AND blood oranges are loaded with Vitamin C, fiber, and a good source of folate. These babies are available from December through June so get out there and get some while you can.

    Ingredients

    • 1 ½ lb bone-in chicken breasts, thighs, and wings
    • 3 tablespoon olive oil
    • 1 teaspoon garlic powder
    • ¼ tsp oregano
    • 1 teaspoon cumin
    • ¼ teaspoon ginger
    • ½ teaspoon cinnamon
    • ¼ teaspoon cayenne pepper
    • 1 teaspoon salt
    • ¼ teaspoon pepper
    • 3 Sunkist blood oranges sliced thin
    • ¼ cup fresh squeezed blood orange juice
    • ½ red onion sliced thin
    • 1 ½ cups small potatoes halved

    Instructions

    • Preheat oven to 450°.
    • In a medium-sized bowl, combine the chicken, olive oil, garlic, oregano, cumin, ginger, cinnamon, cayenne, salt, and pepper. Toss well to evenly coat the chicken.
    • Lay the blood oranges on the bottom of a rimmed sheet pan. Place the chicken pieces on top. Add the potatoes and onion around the sides of the chicken. Drizzle with more olive oil and salt and pepper.
    • Drizzle all the chicken and vegetables with the blood orange juice.
    • Roast for 30-40 minutes or until chicken is cooked through tossing once while cooking.
