I have been making this Supergreens Salad with Cherries and Feta every other day. It's totally addictive and good for you to boot! I love it when I find a new salad I like because I get so bored with the regular stuff. I don't want to feel deprived when I'm eating a salad. I want seasonal ingredients put together in different ways to keep me interested.
As I have mentioned several times, bathing suit season is almost here...five days to be exact! I haven't even tried on my new one because I'm too scared. You young folks won't get this, but it's really hard to lose weight after age 40. I mean even 2 pounds! It's nearly impossible! Your body just doesn't respond like it used to. It's called perimenopause!
I make a big bowl of this and eat it all week. Sometimes I skip the feta if I'm really feeling disciplined and it's still great. Do not dress the salad if you are planning to keep leftovers. I have also added chicken and a grain like quinoa to this to give it a protein boost.
I hadn't tried grapeseed oil until just recently. It works great for salad dressings. I can't believe I'm saying this but sometimes I get sick of olive oil. Yes, it's true. For dressings, I find it to have a very strong flavor and I prefer something more subtle. Grapeseed oil has a very mild flavor as does avocado oil. If you are doing the paleo or Whole30 diet you will have to go with the avocado oil.

Supergreens Salad with Cherries and Feta
Ingredients
- 1 bag supergreens about 4 cups, washed and dried
- 1 cup almonds
- 1 cup cherries pitted and halved
- ¼ cup feta
- For Dressing:
- 3 tablespoon grapeseed oil
- 1 tablespoon red wine vinegar
- 1 tablespoon honey
- salt and pepper to taste
Instructions
- Toss all salad ingredients in a large bowl.
- Mix all dressing ingredients in a jar and shake. Add salt and pepper to taste.
- Dress salad right before serving.

Whole almonds? sliced? slivered? toasted? Seems like whole ones would be a tooth-breaker. This sounds good -- my daughter gives me cherries from her tree -- but I'm gonna experiment with sliced, toasted almonds, or maybe sunflower seeds. Would love to know what you meant, though. No idea what supergreens are, but I'm gonna assume basically a mixed bag of greens like arugula & lettuce.
