This Tuna Poke Bowl with Mango and Quinoa is super healthy, filling and full of seasonal flavors. Sushi grade tuna with a salty dressing and a load of veggies all layered on a bed of quinoa. {gluten free}
Have you had a poke bowl yet? If not, do it today. Poke bowls are inspired by those eaten in Hawaii and are pretty simple to put together.
Take some sushi grade fish, toss with some salty dressing, layer in some veggies and throw it over sushi rice. I don't eat rice so mine is layered on quinoa - more protein and way healthier than white rice. Trust me, you are going to love this. It's like deconstructed sushi but has room for more veggies. This Tuna Poke Bowl with Mango and Quinoa will make you could feel good about eating the rainbow for lunch.

I got my sushi grade tuna at Whole Foods and it was delicious. It's a little pricey so not something that I can afford to eat every day but I wish I could! Use whatever vegetables you have on hand like carrots, snow peas, cucumbers, sprouts, seaweed salad, avocado, radishes, or edamame. Add something sweet like mango and drizzle with a salty poke sauce.
I think this Tuna Poke Bowl with Mango and Quinoa will become your new favorite lunch because it's...
- healthy
- fresh
- salty
- high in protein
- filling
- delicious!
- gluten free
I guess I'll make my own poke bowls until someone gets me to Hawaii!
