Take my oldest son for example. We spent many Saturdays coaxing him to join a team or go to soccer practice when he was younger. He was nervous, hated playing on teams where he didn't know anybody and was just a home body. Fast forward to middle school and he is head over heels in love with basketball. Since January 1, he has practiced 100 shots per day, every. single. day. I am so proud of him. Last night he tried out for a year round team without any friends doing it with him. That's a huge step for him. He tells me every day all he wants to do is play basketball. I love that boy.
As a mom, you can nag them, plead with them, encourage them, show them by example and even bribe them, but in the end, it must happen within them. Just hold on, have faith and keep on keeping on!

This looks so complicated but it's really not. Yes, it takes longer than pouring a bowl of cereal but is great for a special occasion.
The pink and green layers are basically thick smoothies and the bottom layer is just chia seeds and coconut milk. Chia seeds are nutrient powerhouses. They are full of omega 3 fatty acids, protein and calcium. Plus they fill you up! You'll be shocked by how filling this Kiwi and Raspberry Chia pudding is.
The chia pudding part firms up in the fridge after two hours or you can leave it overnight just like these Apple Pie Overnight Oats. It's great the next day for an afternoon pick me up.

Kiwi and Raspberry Chia Pudding
Ingredients
- Chia layer:
- ½ cup chia seeds
- 1 ½ cup coconut milk
- Pink Layer:
- 1 cup frozen raspberries
- ¼ cup coconut milk
- 1 banana
- Green Layer:
- 1 banana
- 1 cup spinach
- 2 kiwis
- 3 pieces of ice or more
- 2 tablespoon coconut milk
Instructions
- First, stir together the chia seeds and 1 ½ cups milk.
- Place in fridge for at least two hours to set. When set proceed with recipe.
- Place the chia pudding layer in the bottom of two glasses.
- For pink layer, mix all ingredients in a high-powered blender. You want the mixture to be thick so the colors don't run together when you layer them in your glass.
- Gently pour the pink layer over top of chia layer.
- For green layer, mix all ingredients in a high-powered blender.
- Gently pour green layer on top of the pink layer.
- Top with sliced fruit.
- This makes two big servings or four small servings.
- If you need more sweetness add 1 tablespoon maple syrup to one of the layers.

Part of getting kids to eat things sometimes, is if it looks good & the bright colors here are just so attractive. It also goes a step above other recipes in being good for you with the hidden vegetable (spinach) in there with the kiwi who's powerful flavor will hide the spinach taste. A kiwi, though smaller, has more vitamin C than an orange anyway.
If you run into 'texture trouble' with someone who doesn't enjoy the tapioca-type texture of the chia pudding bottom layer, you can also just as easily mix the same amount of seeds in with the fruity layers & blend it so it disappears.
