Have you made chia pudding yet? Come on... it's time. Let's start with these Mango Chia Pudding Cups.
Chia pudding is surprisingly delicious. It takes on the flavor of whatever fruit you add in. If you prefer a sweeter taste you can add honey, maple syrup or vanilla. It works with almond milk, coconut milk or regular milk.
You can layer it like this Kiwi and Raspberry Chia Pudding, add it to your Green Smoothie Bowl with Raspberries or put it in your Apple Pie Overnight Oats. So many possibilities.
OR you can be totally healthy (decadent) and add natural creamy almond butter. It makes the perfect layer for in between the chia pudding or for that extra special drizzle on top.

I like to make these on Sunday and have them in the fridge for snacks in the afternoon when the hanger kicks in. In other words... when I crave endless amounts of chocolate chips.

Mango Chia Pudding
Ingredients
- 1 mango
- 1 banana
- ½ cup almond or coconut milk
- 4 teaspoon chia seeds
- 2 tablespoon natural creamy almond butter
- 2 tablespoon full fat yogurt (optional)
Instructions
- Blend mango, banana and almond milk in a high speed blender. Divide evenly among two small jars.
- Add 2 tsp to each bowl and stir. Cover and refrigerate. After 10 minutes give it a stir and return to fridge. Chill for a few more minutes and it should be ready.
- Add 1 tablespoon of yogurt and 1 tablespoon of almond butter. Garnish with fresh mango.

Ooooh for the LOVE of mango - I can feel like I'm on a tropical beach while I wait for spring! I adore chia pudding and eat it almost exclusively during summer - but as a snack year round. This looks fabulous, Karen and I love how you included a dollop of almond butter! SO good!
