Avocado Toast with Microgreens - healthy breakfast with gluten free toast.

It's amazing that something so simple can taste so good.  I mean it's not even a recipe...you just throw it together.

Smashed avocado with a sprinkle of sea salt...

    A pile of rainbow microgreens...

Add a drizzle of balsamic syrup and a sprinkle of crushed red pepper...

    Fancy, filling, and healthy breakfast!

If you are smitten with avocado toast like I am here are some other ideas for topping your avocado treats...

    • cream cheese and lots of garlic salt
    • bacon and tomatoes
    • fried egg and hot sauce
    • feta and olives
    • pears, blue cheese, and pecans
    • smoked salmon and red onion slices

Avocado Toast with Microgreens - healthy breakfast with gluten free toast.

I've been kinda obsessed with balsamic syrup over here and you can see it on my Arugula and Prosciutto Pizza and Easy Balsamic Chicken.  I could just drink it from the bottle, it has so much concentrated flavor. It's a great shortcut to making things taste over the top delicious.

I use Udi's Gluten Free Whole Grain Bread for this Avocado Toast with Microgreens and it's perfect.  It toasts up nicely and has a hearty multigrain flavor to it.

This Avocado Toast with Microgreens is...

    • gluten free
    • crunchy
    • creamy and sweet
    • full of flavor
    • filling
    • nutritious

I totally agree with you on something so simple tasting good! It really makes me wonder why anyone would want yellow, salty processed crap out of a bag when healthy, delicious food like this is available!

This is going to sound weird, but I have a moderate to sever obsession with microgreens. Like, I put them on EVERYTHING. So to me, this is the end all, be all of avocado toasts! Love that you added balsamic and crushed red pepper flakes too! This is definitely some toast I could devour on the regular! Cheers, girlie!

Avocado toast for breakfast, lunch, or dinner - I'm there. The simplicity of it makes it SO good! Microgreens have been my latest obsession, so I love that you added them to the toast! Plus balsamic! Ah I want this right now.

OMGeeeze... this is exactly what I need, some healthy breakfast ideas. I am training for a triathlon and I am bored stiff with my repertoire of breakfast items. I love the avocado + balsalmic combo. Thanks for sharing.
