Smashed avocado with a sprinkle of sea salt...
A pile of rainbow microgreens...
Add a drizzle of balsamic syrup and a sprinkle of crushed red pepper...

If you are smitten with avocado toast like I am here are some other ideas for topping your avocado treats...
- cream cheese and lots of garlic salt
- bacon and tomatoes
- fried egg and hot sauce
- feta and olives
- pears, blue cheese, and pecans
- smoked salmon and red onion slices
I've been kinda obsessed with balsamic syrup over here and you can see it on my Arugula and Prosciutto Pizza and Easy Balsamic Chicken. I could just drink it from the bottle, it has so much concentrated flavor. It's a great shortcut to making things taste over the top delicious.
I use Udi's Gluten Free Whole Grain Bread for this Avocado Toast with Microgreens and it's perfect. It toasts up nicely and has a hearty multigrain flavor to it.

Avocado Toast with Microgreens
Ingredients
- 2 pieces of gluten-free toast I use Udi's
- 1 avocado
- 1 cup rainbow microgreens
- balsamic glaze
- salt
- crushed red pepper
Instructions
- Cut avocado in half and scoop out the flesh. Sprinkle with sea salt and smash with a fork.
- Spread avocado on warm toast.
- Top with microgreens, sprinkle with a pinch of crushed red pepper and drizzle with balsamic glaze.

This is going to sound weird, but I have a moderate to sever obsession with microgreens. Like, I put them on EVERYTHING. So to me, this is the end all, be all of avocado toasts! I used the Good Seed Dave's Killer Bread, aged Balsamic vinegarette and broccoli micro greens, and added a little lime and diced grape tomatoes in the avocado. It was phenomenal!!
