    Fish Taco Grain Bowl

    Take your favorite fish taco recipe and put it into a bowl.  This Fish Taco Grain Bowl is layered with quinoa, flaky white fish, red cabbage, avocado, and tomatoes.  It's hearty, satisfying and oh so healthy.  {gluten free, dairy free}

    Grain bowls are the bomb!  Seriously, I think it's the quickest, easiest way to healthy eating and can even help you lose weight.

    They are easy to throw together and they make the perfect blank slate for all the seasonal produce you have floating around your fridge.  When I'm really on the ball I've meal prepped roasted veggies, protein and a big batch of quinoa so all I have to do is assemble the bowl. (buddha bowl, macro bowl, nourish bowl...so many names)

    I am obsessed with tacos of all kinds but especially fish tacos.  This Fish Taco Grain Bowl is full of seasonal goodies like fresh avocados, red cabbage, radishes, and tomatoes.  Lucky for me this striped bass came fresh out of the Chesapeake Bay after a recent fishing trip.  It was so delicious and we had so much leftover, I've been eating this bowl for days!

    How To Make The Best Grain Bowls...

    1. Pick a Grain - well duh, try quinoa, barley, rice, millet, couscous, I usually stick to about ½ cup grains to keep the serving size under control
    2. Add vegetables - I love mine roasted like broccoli, cauliflower, brussel sprouts, tomatoes, asparagus or broccoli rabe
    3. Add protein - chicken (even rotisserie), steak, fish, pork, tofu, salmon
    4. Add dressing or drizzle with lemon/lime juice
    5. Add toppings like fresh avocado, herbs, and nuts (don't overdo it here or the calories will be sky high)

    Ingredients

    • ½ cup cooked quinoa
    • 1 cup flaked white fish, I used striped bass
    • ¼ cup red cabbage
    • ¼ cup grape tomatoes
    • ½ avocado
    • 1 lime
    • 2 radishes
    • salt and pepper

    Instructions

    • Place ½ cup cooked quinoa in a bowl. Top with flaked fish.
    • Add toppings and drizzle everything with a generous amount squeeze of lime juice.
    • Salt and pepper to taste.  

    Notes

    If you prefer this to be warm just pop the quinoa and fish in microwave for 30 seconds then add toppings.
    I cooked my striped bass in the oven at 425 degrees for about 15 minutes.
