    Keto Brownies with Almond Flour

    These are the ultimate easy Keto Brownies with Almond Flour.  They are super chocolatey with a hint of nuttiness from the almond flour.  It's dense and not too sweet - perfect to satisfy those sugar cravings.  {gluten free, keto, paleo}

    Sometimes you just have to have some chocolate to satisfy those cravings!

    It's not wise to totally ignore our cravings, in fact, I find that eating sweets like this now and then really helps me stick to a healthy plan.  If I don't give in then I just crave and obsess!

    One of the best flours to use when you are baking keto is almond flour.  According to the USDA Nutrition Database, ¼ cup of almond flour has about 11 grams of fat, 6 grams of carbs, and only 3 grams of fiber so net carbs = 3 (carbs - fiber).  And it's super nutritious and packed with 6 grams of protein. 

    Almond flour is created from almonds that have had the skins removed and then they are ground into a find flour.  This is not the same as almond meal.  You can also put your own raw almonds into a blender and make your own almond flour.  

    It's not easy to overindulge on almond flour baked goods because they are dense and fill you up fast.  They don't spike your blood sugar like white flour alternatives. That's a win-win.  🍫

    Low Carb Sweeteners 

    The other secret to making Keto Brownies is the sugar replacement.  If you are following paleo or whole30 you can use coconut sugar but keto rules are no sugar.  I replace my sugar with powdered Erythritol which is a low carb sweetener that can be used as a sugar substitute.  It doesn't taste the same as regular sugar but it works fine in recipes like this. I also love xylitol and Lakanto both of which can be subbed in here.  (affiliate links)

    These Keto Brownies only have 4 Net Carbs!  Woohoo!

    Instructions

    Okay, don't be scared because these are fairly easy. They will mix up in one bowl much like regular brownies but they are not the same consistency. These are thick and dense - you have to spread them out in the pan before baking. I like to store mine in the fridge because they can get stale when sitting on the counter.  

    I do not suggest substituting any other flours in this recipe.

    FAQ

    1. Can I freeze Keto Brownies? Yes, you can freeze these Keto Brownies.  Just place slices on a sheet pan lined with wax or parchment paper and freeze them for about an hour.  Then wrap them individually in plastic wrap and freeze.  You can zap them in the microwave or let them thaw overnight in the fridge.  They are not as good as when they are fresh but they still satisfy urgent chocolate cravings!
    2. How to make Keto Brownies with almond flour?  It's pretty easy to work with almond flour but it can lead to a dense brownie.  The baking powder and cocoa powder brings this all together and makes it work.
    3. Are Keto Brownies healthy?  They are WAY better for you than having regular brownies but I wouldn't say they are healthy.  Almond flour adds protein and clearly these have no sugar so that's great.  Any healthy diet is one that includes room for treats like this, so they have their place!
    4. Are gluten free brownies keto?  No, there are plenty of gluten free flours that are not keto. The only flours that are keto are almond flour, coconut flour, chickpea flour, hazelnut flour and even chia seed flour.

    Ingredients

    • ½ cup grass fed butter, melted and cooled
    • 1 cup almond flour
    • ½ cup cocoa powder
    • ½ teaspoon baking powder
    • ⅓ cup xylitol
    • ¼ teaspoon salt
    • 3 eggs
    • 1 teaspoon vanilla
    • 2 tablespoon Lilly's chocolate chips

    Instructions

    • Preheat oven to 350 degrees.  Line a 9 x 9 baking pan with parchment paper and spray with cooking spray.  
    • Whisk together all dry ingredients.  Add butter, eggs, and vanilla.  Make sure the butter is cooled!
    • Mix well, the batter will be thick.  Spread into pan and sprinkle with chocolate chips. Bake for about 15 minutes.  The center may not look done but take them out and let them sit. You want the edges to be set.

    Notes

    For Paleo and Whole30 you can substitute 1 to 1 for coconut sugar. 
    Do not try to substitute any other flours in this recipe. 
    Feel free to substitute Lakanto or Swerve sweetener in a 1 to 1 ratio.
