This Pumpkin Baked Oatmeal is made in five minutes or less and is oh so satisfying. It's cooked in the microwave for two minutes and topped with chocolate, granola and peanut butter. {gluten free}
Have you ever made a mug cake? Well, that's basically what this Pumpkin Baked Oatmeal is. It is made with just a few ingredients and cooked for 2-3 minutes in the microwave. Top it with all the goodies and you are ready for your day.
These creamy bowls are full of good for you oats, one egg, almond milk, pumpkin puree, cinnamon, maple syrup and vanilla extract.
To make this Pumpkin Baked Oatmeal you only need a few ingredients:
- gluten free oats
- 1 egg
- pumpkin puree
- almond milk
- cinnamon
- vanilla extract
- pure maple syrup
This recipe makes two microwaveable servings but you can easily cut it in half to make single servings. We love this on busy fall mornings because it can be made quickly but tastes like it's been baked in the love. Feel free to bake this in a mug so you can take it on the go.
When I am eating it at home I like to eat it warm with a little almond milk on top. So good!

Hi Im curious to where the trans fat came from? The ingredients say 1g of trans fat?
Karen Kelly says
That is a great questions and I'm not sure I know the answer because none of these ingredients contain trans fat. I use a recipe card that calculates the nutrition but it's not perfect so I would say use it with caution.
