    Pumpkin Baked Oatmeal

    This Pumpkin Baked Oatmeal is made in five minutes or less and is oh so satisfying.  It's cooked in the microwave for two minutes and topped with chocolate, granola and peanut butter.  {gluten free}

    Have you ever made a mug cake? Well, that's basically what this Pumpkin Baked Oatmeal is.  It is made with just a few ingredients and cooked for 2-3 minutes in the microwave.  Top it with all the goodies and you are ready for your day.

    These creamy bowls are full of good for you oats, one egg, almond milk, pumpkin puree, cinnamon, maple syrup and vanilla extract.  

    To make this Pumpkin Baked Oatmeal you only need a few ingredients:

    • gluten free oats
    • 1 egg
    • pumpkin puree
    • almond milk
    • cinnamon
    • vanilla extract
    • pure maple syrup

    This recipe makes two microwaveable servings but you can easily cut it in half to make single servings.  We love this on busy fall mornings because it can be made quickly but tastes like it's been baked in the love.  Feel free to bake this in a mug so you can take it on the go.

    When I am eating it at home I like to eat it warm with a little almond milk on top. So good!

    Equipment

    • microwave

    Ingredients

    • 1 cup old fashioned rolled oats (gluten free if needed)
    • 1 egg
    • 1 cup almond milk (any milk will work)
    • 2 tablespoon pumpkin puree
    • 1 teaspoon vanilla extract
    • ½ teaspoon cinnamon
    • 3 teaspoon pure maple syrup

    Instructions

    • Mix all ingredients in a medium sized bowl.
    • Spray two microwave safe mugs or bowls with a little cooking spray and pour oatmeal mix into bowls. Cook for about two minutes checking halfway through.
    • Top with chocolate chips, more maple syrup, granola and serve.
