It's the first Friday of Lent and we are really trying to stick to no meat on Fridays this year. I've been trying to cut down on how much red meat we eat around here so this is the perfect way to do it. My kids could eat hamburgers and steak every night of their lives!
Let's face it, I could never be vegan but I do think it's important to have fish and chicken more frequently than beef.
This Skinny Chili Salmon with Avocado and Mango is so easy to put together yet it looks fancy enough for company. The salmon is sprinkled with chili powder, paprika, and cumin and drizzled with olive oil - that's it! I know I could have added jalapenos, onions or cilantro to this avocado and mango salsa but I was keeping it super simple here today and I just chopped them up and sprinkled them with lime juice. The lime juice adds flavor and also helps to keep those avocado chunks from browning.
I absolutely love dishes like this that take a simple dinner and add what's in season to spice it up a bit. That's what healthy eating is all about - taking advantage of the produce that's in season. Our bodies need lots of different seasonal produce in order to get the nutrients we need. I can't wait for Spring produce!

Skinny Chili Salmon with Avocado and Mango
Ingredients
- 3 pieces of salmon
- 1 tablespoon olive oil
- ¼ teaspoon chili powder
- ¼ teaspoon paprika
- ¼ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon pepper
- For topping:
- ½ mango cut into small cubes
- ½ avocado cut into small cubes
- ½ lime
- salt and pepper to taste
Instructions
- Preheat oven to 425º.
- Place salmon filets skin side down on a sheet pan that has been sprayed with cooking spray.
- Drizzle with olive oil.
- I sprinkled on the spices so just add more or less to your liking.
- Bake for about 12 minutes or until cooked through.
- Mix together toppings right before serving. Squeeze lime juice over top of mango and avocado mixture.
- Garnish with cilantro or parsley.

I don't eat a lot of meat (just occasionally) and do try to incorporate a lot of fish, vegetarian and vegan meals in my diet. This one looks delicious! Love the avocado and mango combination. I agree with you! I could never be a vegan but over the years I've cut back on my overall meat consumption and added more seafood. I love the chili, mango, and avocado mix in this dish! I try to eat seasonally all the time but especially in spring-I feel like it helps reduce my spring-time allergies.
