    Blood Orange and Chocolate Oatmeal

    I never get tired of wholesome oatmeal loaded with seasonal goodies like this Blood Orange and Chocolate Oatmeal.  Made easily in the microwave and full of citrus flavor.  {gluten free, vegan, dairy free}  

    Why do I love oatmeal so much?  It's so satisfying and loaded with nutrients...

    • high in fiber
    • rich in antioxidants
    • can help control blood sugar
    • contain vitamins and minerals like manganese, phosphorous, magnesium, and copper (from Healthline)

    two bowls of oatmeal with blood oranges and chocolate I could top oatmeal with different delicious toppings 365 days out of the year. In fact, I try to come up with new toppings each week and share a photo on Instagram.  I prefer making my oatmeal in the microwave because it's fast and produces a nice consistency. 

    • Add ½ cup gluten free instant oats to a bowl with about ½-3/4 a cup of water and a dash of salt. (Don't skip the salt it makes it so tasty!)
    • Cook for 1 minute in the microwave and stir.
    • I like to add Califia plain almond milk until I get my desired consistency.
    • Then... the BEST part... the toppings!

    Here are some of my favorite oatmeal toppings...

    • pistachios
    • almonds
    • peanuts
    • pecans
    • walnuts
    • macadamia nuts
    • raspberries
    • blueberries
    • strawberries
    • blackberries
    • pomegranate arils
    • fresh or frozen cherries
    • banana slices
    • chopped apples
    • chopped pears
    • chopped peaches
    • cranberries
    • raisins
    • dried apricots (watch the sugar content on dried fruits)
    • dried apples
    • dried blueberries
    • flaked or shredded coconut
    • almond butter (melt in the microwave for 30 seconds and drizzle over top)
    • peanut butter
    • cashew butter
    • pumpkin seeds
    • flaxseeds
    • chia seeds 
    • hemp seeds
    • sesame seeds
    • sunflower seeds
    • yogurt
    • cottage cheese
    • cocoa powder
    • spices - cinnamon, nutmeg
    • drizzle of honey
    • a drizzle of maple syrup
    • protein powder

    Ingredients

    • ½ cup gluten free oatmeal I like Bob's Red Mill
    • 1 cup water
    • dash of salt
    • 2 tablespoon almond milk
    • ½ blood orange sliced
    • 2 tablespoon chocolate chips
    • 2 tablespoon pistachios

    Instructions

    • Add oatmeal, water, and salt to a bowl and cook in microwave for one minute.
    • Add some almond milk to taste and top with blood oranges, chocolate chips, and pistachios.
    • Serve immediately.

    Notes

    If you are gluten free make sure your oats are certified gluten free.
