    Cauliflower Broccoli Bake with Alfredo {Keto}

    Craving some creamy goodness? This Cauliflower Broccoli Bake with Alfredo {Keto} will satisfy your cheesy cravings. It's packed with cauliflower rice, broccoli, alfredo sauce, and parmesan cheese.  {gluten free, keto, low carb} Serve it as a side dish or make it a full meal by adding in some chicken.

    Do you ever get tired of the same old side dishes every night? I know I do and so do my kids.  I roast the same vegetables just about every night of the week.

    This Cauliflower Broccoli Bake really steps it up.  It's packed with tender cauliflower rice and broccoli then covered with alfredo sauce and parmesan.

    Ingredients to Make This Recipe

    • Cauliflower rice - Frozen cauliflower rice makes this recipe so easy to put together.
    • Broccoli - Fresh is better than frozen, but either should work just fine.
    • Alfredo sauce - Use premade sauce if you want to get this on the dinner table fast.
    • Olive oil - Drizzle a little bit on the cauliflower rice before cooking.
    • Salt and pepper - Brings out the flavors in the dish.
    • Parmesan cheese - Top with parmesan for a nice and cheesy finish.

    How to Make Cauliflower Broccoli Bake

    1. Preheat oven to 400 degrees.  Pour cauliflower rice into a 9 x 13 baking dish and drizzle with the olive oil. Toss gently.   Bake at 400 degrees for 12 minutes. 
    2. Meanwhile, steam broccoli in the microwave.  Place broccoli in a microwave-safe bowl with 1 cup water.  Cook for about 10 minutes or until tender.  Drain and set aside.
    3. Remove cauliflower from the oven and add broccoli, alfredo sauce and salt, and pepper. Toss gently.  Top with parmesan cheese and bake again for 20 minutes or so. Serve immediately or refrigerate up to three days.

    Tips for Making Cauliflower Broccoli Bake

    1. I used pre-cut cauliflower rice from Trader Joe's. I used the fresh version but they also have frozen and I always have that stocked in my freezer.  That stuff is the bomb and I use it all the time.

    2. Use prepared alfredo sauce (also from Trader Joes). It makes this creamy dish so easy to make on a weeknight. Make sure yours is gluten free if needed.

    3. If you don't like broccoli, feel free to substitute in spinach instead. If you are using frozen spinach, make sure you thaw it well and then squeeze all the moisture out with a dishtowel. Peas would also be a good addition to this casserole.

    Cauliflower broccoli bake can be made in less than 30 minutes and it makes great leftovers.  If you are following the keto diet this is perfect for you.  It's low carb and has a fair amount of fat.  Add some protein like chicken or fish on the side and you have a keto dinner!

    Ingredients

        Hi Pat, you just put cauliflower into your food processor and pulse it until it resembles rice. It's a great low carb alternative to regular rice.

      I took this idea and made it the following way:
      I steamed 1 bag of broccoli rice and 1 bag of cauliflower rice
      drained them in a colander
      I used the same pot while it was warm and to mix a tub of whipped light cream cheese with 2% milk and cook until blended.; season with salt and pepper. Added paremsan cheese and a splash of olive oil. then returned the drained vegetables to the pot and mixes. Baked at 50 for 40 minutes

      Everyone said it was delicious. Including the preteen grandchildren. (Even the picky one) I adjusted a little by using the full jar of Alfredo, because I added shredded rotisserie chicken to make a complete meal. It was so good. I think I’ll need to double the recipe next time. There were no leftovers!
