    Easy Gluten Free Seven Layer Bars

    These Easy Gluten Free Seven Layers Bars are just what your holiday table needs. They are packed with layers of chocolate, coconut flakes, and pecans.  

    Gluten Free Seven Layer Bars are packed full of chocolate and coconut stacked up.

    This classic holiday dessert is made gluten free with layers of sweet chocolate chips, butterscotch chips, shredded coconut and pecans.  A perfect treat to share with family and neighbors and to eat with coffee.

    These things are seriously deadly.  They are layered with all things sweet and yummy and covered in sweetened condensed milk.  They are rich and comforting.

    These Gluten Free Seven Layer Bars have taken a while to get right.  It's just not easy to get that bottom layer right when it's gluten free.

    Usually, I would crush up some graham crackers, add some melted butter and be good to go.  I can't find good gluten free graham crackers in the store anymore.

    In these Gluten Free Seven Layer Bars (also called Dolly bars), I have replaced the graham crackers with a combination of almond and coconut flours.  It still has lots of rich melted butter. 

    I like to add a bit of salt because I use unsalted butter but that is optional. 

    This crust is NOT sweet so if you taste it on its own you might not like it.  BUT because these Seven Layer Bars are packed with tons of sweetness it all works out in the end.

    Ingredients for Easy Gluten Free Seven Layer Bars

    • ¾ cup almond flour (I like Bob's Red Mill)
    • ¾ cup coconut flour
    • ⅛ teaspoon salt
    • 1 stick of unsalted butter
    • 1 14oz can of sweetened condensed milk
    • 2 cups semi-sweet chocolate chips ( I prefer Enjoy Life Mini Chips)
    • 1 ½ cups shredded coconut, sweetened
    • 1 ½ cups chopped pecans

    How to Make Gluten Free Seven Layer Bars

    1. Preheat the oven to 350 degrees Fahrenheit and place the rack in the middle of the oven. Spray a 13x9 inch baking pan with cooking spray.
    2. Whisk together flours and salt in a medium-sized bowl. Pour melted butter in a stir well with a fork.  The mixture will be crumbly.  Press firmly into the bottom of the pan. 
    3. Layer chocolate chips, coconut flakes, and pecans.  (Also butterscotch chips if using) Pour the sweetened condensed milk over the crust spreadly evenly.
    4. Bake until golden browned about 25-30 minutes.
    5. Remove from oven and let cool.  Chill in the fridge ten minutes before cutting. It will help it to set up.

    Tips and Tricks

    My kids don't like butterscotch chips so I didn't use them but feel free to do one cup of chocolate chips and one cup of butterscotch chips. 

    You can even use white chocolate or peanut butter chips in here. 

    These will last a few days on the counter in an airtight container or longer in a plastic container in the refrigerator.  They do not need to be refrigerated but I do like them chilled.  You can also store them in the freezer. 

    Can I use coconut flakes instead of shredded coconut?  Sure because they are basically the same thing. 

    Coconut flakes have been cut and the pieces will be bigger than the shredded version.  I prefer shredded in this recipe.

      I've always loved 7 layer bars, but my husband is GF. I decided to look for recipes, just in case there was yours! No coconut flower or pecans, so I used tapioca flour and walnuts. I think they turned out great Thank you so much!

      Being lactose intolerant I also used Sweetened Condensed Coconut Milk. Just make sure to stir the milk well before pouring. Excellent Seven Layer Bars.
