    Pumpkin Popsicles

    Craving a healthy snack that's out of the ordinary?  Try these Pumpkin Popsicles with only a few ingredients.  They are drizzled with a sweet chocolate sauce that really takes them over the top.  {gluten free}

    Sometimes we need a little something new to snack on, am I right?  I mean protein bars are great but how about switching those out for a little something different like these Pumpkin Popsicles.  

    They are easily made with plain Greek yogurt and pumpkin puree.  Add a few spices and a little pure maple syrup to sweeten them and that's all you need.  I love using these small popsicle molds to make snack-sized pops.  

    These Popsicles are:

    • sweet but not too sweet
    • loaded with protein from the Greek yogurt
    • covered with a sweet chocolate drizzle to make it extra satisfying
    • sweet grab and go snack

    These Pumpkin Yogurt Popsicles are made with only a few ingredients:

    • plain Greek yogurt - feel free to go dairy-free here and make your pops dairy free
    • pumpkin puree - straight from the can
    • pure maple syrup
    • cinnamon - or you could add pumpkin pie spice
    • vanilla extract 
    • melted chocolate - I used Lily's unsweetened chocolate chips

    Equipment

    • popsicle mold

    Ingredients

    • 1 cup pumpkin puree
    • 1 ½ cups plain Greek yogurt
    • ½ teaspoon cinnamon
    • 1 teaspoon vanilla extract
    • 5 tablespoon pure maple syrup
    • 5 tablespoon melted chocolate, I like Lilys or Enjoy Life chocolate
    • 1 tablespoon coconut oil

    Instructions

    • Mix the pumpkin, yogurt, cinnamon, Rodelle Vanilla Extract, and maple syrup in a medium-sized bowl.
    • Carefully spoon the yogurt mixture into your popsicle molds and place a popsicle stick in each mold.
    • Freeze for at least 6 hours or overnight.
    • When ready to unmold melt the chocolate and coconut oil in a microwave safe bowl in 30 second increments, stirring each time.
    • Unmold popsicles and lay them on parchment paper. Using a spoon, drizzle generously with the chocolate. It should set up quickly. Wrap in plastic wrap when storing in freezer.

    Notes

    Use dairy-free yogurt for a dairy-free popsicle.  
    Wrap well in plastic wrap or store in freezer bags for a few days in the freezer.  Best eaten within a day or two.
