    Craving a hearty, but healthy lunch?  Sausage Stuffed Sweet Potatoes will fill you up and keep you full of energy all afternoon.  {gluten free, paleo, whole30}

    Sausage Stuffed Sweet Potatoes - full of protein and greens {gluten free, paleo, whole30}

    Do you love sweet potatoes as much as I do?  I have been obsessed with them lately in Paleo Quiche Cups, sheet pan dinners, chili and salads. They are so sweet and delicious and go well with so many different flavors.

    Sweet potatoes are full of Vitamin A, Vitamin C and have anti-inflammatory properties.  I like them because they help regulate blood sugar and they keep me full.  They are perfect for weekly meal prep.  Bake a bunch of them on Sunday and stuff them full of leftovers all week.  Add greens like spinach, kale or mustard.  Use proteins like sausage, chicken, steak or pulled pork.  Top with a sprinkle of parmesan or feta if you so choose.

    If you are following the paleo or whole30 diet make sure your sausage is approved.  Try Aidell's Chicken Apple Sausage, Applegate Farms and Niman Ranch.

      Growing up, stuffed potatoes were one of my favorite meals. As an adult, I always seem to forget about them. This however, has me drooling and wishing I could make this right this moment! Can't wait to dive in!

      This is a great idea! I love adding the meat to it because it adds a whole new layer of protein and flavor to this. Yum!
