    Celebrate apple season with this delicious Sheet Pan Apple Cider Glazed Salmon.  It's easy to prepare and the salmon tastes great slathered with apple cider sauce. {gluten free}

    Another sheet pan dinner to the rescue! Seriously most days I have NO idea what I am having for dinner even though I run this here food blog.  What is wrong with me?

    What is wrong with me?

    Well, I am human and life is busy.  Getting dinner on the table takes so much planning, list making, shopping and follow through.  I don't always have it in me.

    BUT Sheet Pan Apple Cider Glazed Salmon makes my life easier.  It's just ONE PAN! I could eat salmon every night of the week because I know how good it is for us.

    Sheet Pan Apple Cider Glazed Salmon

    Who knew that reducing fresh apple cider makes the most delicious sauce ever?  I mean it is so good and then adding honey and grainy mustard? Oh my gosh, you will love this.

    Ingredients

    • 3 pieces of salmon
    • 1 cup fresh apple cider
    • 1 teaspoon honey
    • 1 teaspoon grainy mustard
    • 2 cups assorted vegetables (zucchini, peppers, onions)

    Instructions

    • Preheat oven to 400 degrees.  Heat apple cider to boiling in a small saucepan.  Boil until it reduces by half or about 10 minutes.  
    • Remove from heat and whisk in honey and grainy mustard.
    • Place salmon on a sheet pan, skin side down.  Brush generously with the apple cider sauce.
    • Place cut vegetables in a bowl and drizzle with olive oil, salt, and pepper and toss well with your hands.
    • Place vegetables around the salmon. 
    • Cook until salmon is cooked through for about 15-20 minutes.  Brush with remaining sauce halfway through.
