    Sheet Pan Jerk Chicken with Pineapple

    This Sheet Pan Jerk Chicken with Pineapple is full of spicy and sweet flavor that your family will love. It's quick and easy to prepare in one pan and full of good for you vegetables.  {gluten free, paleo, whole30}

    Have you guys heard about the slime craze yet?

    Our house is filled with slime and slime making supplies.  Who knew that finding Elmer's glue would become difficult? Basically, the kids are making homemade slime with glue, shaving cream and a small amount of Borax mixed with water.  It's all over social media and kids are even bringing it to school to sell.

    Honestly, I love that my kids are being creative, learning about science and staying off electronics for that period of time.  I continue to be wary because there have been reports of kids hurting their hands because of misuse or mixing with the wrong materials.  Yikes!  Be careful and I'll keep doing my mommy research here to keep the kids safe.

    When I am busy cleaning up all the slime in my house, I need quick dinners like this Sheet Pan Jerk Chicken with Pineapple. I usually save jerk chicken for the grill but I saw the sheet pan idea in Health Magazine and I was on it.  I love how the pineapples and veggies get some caramelization on them...so much flavor.

    Chicken breasts on a sheet pan have given me trouble in the past and can turn out dry and overcooked. I like to pound out the breast first and helps to ensure that they will be moist. Covering them in the jerk spices means they are full of flavor.  

    You could also use this spice rub to make jerk chicken skewers with peppers, onions, and pineapple.

    Sheet Pan Jerk Chicken with Pineapple

    Ingredients

    • 3 chicken breasts,
    • 2 peppers, sliced
    • 1 onion, sliced
    • ½ cup fresh pineapple, diced
    • 1 teaspoon onion powder
    • ½ teaspoon cayenne powder
    • 1 teaspoon paprika
    • ½ teaspoon cinnamon
    • 1 teaspoon sugar
    • ½ teaspoon kosher salt
    • ¼ teaspoon pepper
    • 1 ½ tablespoon olive oil

    Instructions

    • Preheat oven to 425º. Place chicken breast between waxed paper and pound until an even thickness.
    • Place cut vegetables on a sheet pan and drizzle with olive oil, salt and pepper.
    • Mix spices together in a small bowl and sprinkle on both sides of chicken breasts.  Nestle the chicken pieces in between veggies on the sheet pan.
    • Cook for about 12 minutes or until an instant-read thermometer registers 165º.

    Notes

    To make this paleo and whole30 leave the sugar out of the spice mixture.

      I am such a fan of sheet pan dinners these days, I mean could they be any easier?! I am loving this pineapple jerk chicken one! I just picked up a pineapple that is begging to be caramelized into this dinner!

      Too funny! My daughter brought a friend home to make slime, and I walked in on the fiasco. My response was something like, "what, what, WHAT?!" To this day, I do not understand the WHY of slime. Happily, they cleaned it up. 😉 I am a big fan of jerk chicken AND sheet pan dinners, so combining them into one is a win-win for me! This looks amazing—I can't wait to try it!

      Sheet pan dinners are super. I like being able to put it on the pan, into the oven and going back to take care of whatever. The flavors in this are classic!

      I have seen the slime craze on social media.. but lucky for us our only child has fur and walks on 4 legs, so I don't think she will be asking me to make slime anytime soon. 😉 I'm a huge fan of sheet pan dinners, because they are so easy and delicious, and this one is TOTALLY calling my name, Karen! LOVE the jerk seasoning with the sweet pineapple! SO GOOD! Cheers! <3
