    Chickpea Salad

    This Summer Chickpea Salad is full of fresh flavors and herbs.  It is light, healthy, gluten free and travels well.  Pack it in your lunch or your beach bag! {gluten-free, vegan}

    Does anyone else eat waaaay too much when they are on vacation? Something about this beach air that makes me starving!  I'm more likely to make poor food choices like chips on the beach and wine every night.

    This salad makes it okay for me to pig out on ice cream every night at the Nantucket Juice Bar, right?  Hang with me, peeps!

    Let's just say I need a healthy salad at the ready.  This Summer Chickpea Salad is great because it holds up in the fridge for several days and it packs well in a cooler or lunch bag. It has a super light dressing of olive oil and lemon so it doesn't get soggy.  

    Need a heartier lunch? Add in grilled chicken, steak, shrimp or salmon.

    Ingredients

    • 2 15 oz cans chickpeas garbanzo beans, rinsed
    • ½ red pepper diced small
    • ⅓ cup red onion diced small
    • 1 cup of chopped herbs dill, parsley, and basil
    • 3 tablespoon olive oil
    • 1 tablespoon red wine vinegar
    • 2 garlic cloves chopped
    • juice of 1 lemon
    • ¼ teaspoon crushed red pepper
    • salt and pepper to taste

    Instructions

    • Toss all ingredients in a large bowl. Add salt and pepper to taste.

      This is the perfect guilt-free salad Karen. And you know I'm saving up for that s'mores brownie. We live down at the beach for the summer and can I just tell you everyday I seem to make more poor choices than good. But the process is so much fun!
