Weeknight dinner prep can be a drag, I know, but sometimes it's fun to make something new that's a hit with the family.
This Tortellini Soup with Sausage is family-friendly and savory enough to keep them returning for leftovers. My kids love tortellini and sausage, so they can generally agree on this one.
This Tortellini Soup with Sausage can be made ahead, but I wouldn't add the tortellini until right before you serve it. Make the soup up to that point, then refrigerate.
When you are ready to serve, warm up the soup on the stove and add the fresh tortellini. It only takes a few minutes to cook at that point, and the tortellini won't be soggy.
Tips and Tricks
- I love using fresh tortellini, but you can also use frozen if you have that on hand. If so, you will need to cook it a few minutes longer.
- Making this ahead can be tricky because the tortellini will get overcooked. If I know we aren't eating this until later in the week; I will make the soup up to the point of adding the tortellini and stop. Then when I'm ready to serve it, I'll warm it on the stove, add the tortellini and cook for 5-10 minutes.
- If you have a parmesan cheese rind, throw it in there. It gives it so much creamy flavor.
- You can use any kind of sausage you like here. There are so many delicious sausage flavors available now; just use your imagination. If you want to use a ground sausage, you'll need to fully cook it before adding it to the soup.
- To freeze this Tortellini Soup with Sausage, just let it come to room temperature then put it in a freezer save container with a tight-fitting lid or put it in a freezer bag and lay it flat in the freezer. This will take up less room.
- You can use any vegetables you want in this soup. Add whatever leftovers you have: peppers, broccoli, sugar snap peas, green beans etc.

- onion
- carrots
- celery
- garlic
- tomato paste
- diced tomatoes
- chicken broth (gluten free if needed)
- dried thyme, basil and oregano
- fresh tortellini (gluten free if needed)
- milk
- spinach or kale
- salt and pepper
Instructions
- In a dutch oven or large pot, brown onions, celery, carrots, and garlic in 1 tablespoon olive oil. Cook for 3-5 minutes until onions become translucent.
- Add sausage, and cook for another few minutes. This sausage is precooked, so just try to get a little browning on it.
- Add tomato paste, diced tomatoes, chicken broth, thyme, basil, and oregano, stirring well. Bring to a boil, reduce heat and simmer over medium-low for about 10 minutes.
- Stir in tortellini, and cook for about 5 minutes. Be careful not to let it get too soft.
- Add milk and stir. Add more salt and pepper if needed. Add greens.
- Serve with fresh parmesan.

- ½ teaspoon thyme
- ½ teaspoon dried basil
- ½ teaspoon oregano
- 1 package of fresh tortellini gluten free if needed
- 1 cup milk
- 1 cup spinach or kale optional
- salt and pepper to taste

the sausage tortellini soup looks and sounds perfect but the recipe does not make sense! It says add tomato past but I assume it means paste then through oregano? Does not say anything about the flour. Again I assume it gets mixed in with the veggies?

Hi Tiffany, I used Aidell's chicken apple sausage but any precooked will do like Hillshire Farms or Applegate. Hope you like it!
