    Greek Quinoa Salad

    Hey, guys, you haven't seen a quinoa recipe on Seasonal Cravings in ages! I used to be obsessed with this protein-packed grain and I put it in everything including this  Instant Pot Turkey Quinoa Chili.

    It's safe to say I'm still obsessed and use it all the time.  I make a big batch each week and love making power bowls like this super simple Greek Quinoa Salad.

    Quinoa is the perfect blank slate for all the seasonal goodies and protein you are craving.  It has a very mild flavor that works well with just about any toppings, sweet or savory AND it's packed with protein.

    For this Greek Quinoa Salad, I packed it with all things Greek!

    • black olives
    • cucumber
    • tomatoes
    • lemon
    • chickpeas
    • cubed feta
    • red onion
    • parsley

    Additional vegetables to consider...

    • avocado
    • hummus
    • sweet red peppers
    • romaine lettuce

    The possibilities for seasonal toppings are endless!

     

    Greek Quinoa Salad Recipe ingredients

    There is one thing that really makes this Greek Quinoa Salad special and that is the lemon and olive oil dressing.  You can't have a good Greek salad without a simple, flavorful dressing like this. Don't you agree?

    For mine, I had to use BertolliⓇ Olive Oil.  Did you know BertolliⓇ is the number one olive oil in the world?  It's true!  Founded in Lucca, Italy the have 150 years of experience and a strong commitment to simple, quality craftsmanship.  I picked mine up at my local Safeway in the baking aisle.

    When the recipe is simple like this the taste and quality of the olive oil really matter.  There are only four ingredients in this dressing: olive oil, grainy mustard, fresh lemon juice, and garlic.  SO you can really taste that olive oil.  That's why I chose BertolliⓇ.  It has a robust, fruity flavor that pairs well with salads.

    My BertolliⓇ Olive Oil stays on my counter 24/7.  I use it to roast veggies, to flavor cauliflower rice and saute meats on the stovetop.  Sometimes I drizzle it straight up on my green salads as a simple wholesome dressing.  It is a must-have in my kitchen and it's indispensable.

    Mediterranean Quinoa Bowls

    Mediterranean Chickpea Quinoa Bowls

    Ingredients

    • 1 cup cooked quinoa
    • ½ cup cucumber, diced
    • ½ cup grape or cherry tomatoes, halved
    • ½ cup black or green olives, halved
    • ½ cup chickpeas, rinsed
    • 4 oz feta cheese, cubed
    • ¼ cup fresh parsley, chopped

    Lemon Garlic Dressing

    • 4 tablespoon BertolliⓇ Olive Oil
    • 1 teaspoon grainy mustard
    • 2 garlic cloves, chopped
    • 2 tablespoon fresh lemon juice
    • salt and pepper to taste

    Instructions

    • Assemble salad with quinoa on bottom and veggies on top.  
    • Add all dressing ingredients into a jar with a tight fitting lid.  Shake well and pour over salad.  
    • Add salt and pepper to taste.  Serve immediately.
    • If making ahead for meal prep do not add dressing.  Dress right before serving.

      Quinoa is at the top of my favorite grain list. I usually make a big batch and freeze half for later! Love it and I looove this scrumptious chickpea bowl! So much goodness, Karen! The dressing is over the top!
