    Quinoa and Rice Stuffed Sweet Potato

    These Quinoa and Rice Stuffed Sweet Potatoes are jam-packed with all kinds of delicious vegetables and a rice and quinoa mixture. They are super satisfying and nutritious.  {gluten free, vegan, dairy free}

    Have you tried purple sweet potatoes (yam) before?  I am such a huge fan of them because they have a mildly sweet flavor and a gorgeous hue! They are packed with antioxidants and have a low glycemic index.  I find sweet potatoes satisfy my sweet tooth and my hunger so I almost always have some on hand for quick, healthy meals.  

    These Quinoa and Rice Stuffed Sweet Potatoes are loaded with vegetables like red pepper onion, carrots, and spinach.  The quinoa and brown rice mixture helps to fill your below with protein and you won't even miss the meat.

    I like having Seeds of Change Quinoa and Brown Rice packets on hand.  They cook in 90 seconds and I add them to salads, soups, grain bowls, and sweet potatoes.  They make quick, healthy lunches that can't be beaten.

    Quinoa and Rice Stuffed Sweet Potato

    Ingredients

    • 3 purple sweet potatoes
    • 1 cup cooked quinoa and brown rice mixture I used Seeds of Change
    • 1 tablespoon olive oil or more
    • 3 cloves of garlic diced
    • 1 red pepper diced small
    • ½ onion diced small
    • 1 carrot diced small
    • ½ cup frozen chopped spinach
    • ½ tablespoon cumin
    • 1 teaspoon turmeric
    • 1 tablespoon lime juice
    • salt and pepper to taste

    Instructions

    • Heat olive oil in a pan over medium-high heat. Add the garlic, onions, red pepper, and carrots. Saute for about 10 minutes or until they soften.
    • Add the turmeric, cumin, salt and pepper. Add quinoa mixture and stir well.
    • Poke sweet potatoes with a fork and cook in microwave until done about 8-10 minutes for all three.
    • Assemble, open sweet potatoes, top with quinoa, rice and vegetable mixture. Add salt and pepper to taste. Top with a squeeze of lime juice.

    Notes

    Feel free to add any vegetables you have in the fridge.
