What no peppermint fudge or cut out sugar cookies today?  No, as much as I love all those goodies, I have to take a break from baking.  My family has to eat, know what I mean?

This time of year is crazy busy with shopping, holiday parties, school concerts, cards to address, decorating and did I mention shopping? These are the days when I need quick dinners at the ready.  It's so embarrassing to admit, but I have a blog full of recipes I love, yet some nights I open the refrigerator and just stare.  I am completely dumbfounded as to what to cook.  Why is that?  Do you feel the same way?

Trust me, when the New Year rolls around I'm going to be on it!  Meal planning and less wasted food - that will be my new motto.

I always have some kind of frozen fish on hand and it works well in this recipe.  Just give the fish a nice browning in olive oil on both sides.  I did the same thing with the tomatoes to get them a bit caramelized and to bring out their awesome flavor and juiciness.  My kids tend to like those meals that are super simple. In fact, they could eat plain chicken breasts sauteed in olive oil and garlic every night of their lives.  The simpler the better.

Here are some other quick dinner ideas to help you get through the busy holiday season...

    • Easy Teriyaki Salmon
    • Five Ingredient Caprese Chicken
    • Chicken Parmesan with Pepperoni (my kids love this one!)
    • Easy Skinny Quinoa Chili

So put away that mixer for now and start cooking some simple fresh dinners for your peeps.  Since this only takes about 20 minutes, you'll have extra time for all that holiday shopping.
