What no peppermint fudge or cut out sugar cookies today? No, as much as I love all those goodies, I have to take a break from baking. My family has to eat, know what I mean?
This time of year is crazy busy with shopping, holiday parties, school concerts, cards to address, decorating and did I mention shopping? These are the days when I need quick dinners at the ready. It's so embarrassing to admit, but I have a blog full of recipes I love, yet some nights I open the refrigerator and just stare. I am completely dumbfounded as to what to cook. Why is that? Do you feel the same way?
Trust me, when the New Year rolls around I'm going to be on it! Meal planning and less wasted food - that will be my new motto.
I always have some kind of frozen fish on hand and it works well in this recipe. Just give the fish a nice browning in olive oil on both sides. I did the same thing with the tomatoes to get them a bit caramelized and to bring out their awesome flavor and juiciness. My kids tend to like those meals that are super simple. In fact, they could eat plain chicken breasts sauteed in olive oil and garlic every night of their lives. The simpler the better.

Skillet Tilapia with Tomatoes
Ingredients
- 3 pieces of tilapia or other mild white fish
- 2 ½ tablespoon olive oil
- 2 cups grape or cherry tomatoes
- salt and pepper
- parsley or basil for garnish
Instructions
- Heat a skillet over medium-high heat and add 1 tablespoon olive oil.
- Sprinkle fish with salt and pepper.
- Add to pan and saute for about 3 minutes per side or until fish is cooked through.
- Remove to a plate and cover with foil.
- Add 1 ½ tablespoon olive oil to pan and tomatoes. Salt and pepper to taste.
- Cook for about 4 minutes or until they get some browning and start to blister, tossing occasionally.
- Add fish back to the same pan and warm for a minute.
- Serve immediately.
