    Hope you guys had a great weekend!  Is it warm where you are?  It's so warm here in DC that my kids are missing ski club for the second week in a row.  In fact, it was 50 degrees and raining Friday night on the mountain.  Ugh, of course this happens the year that I am paying for not one, but two kids to participate in ski club.

    Have I mentioned how much I love ski club?  I am not a fan of skiing, I didn't grow up skiing and I'm generally reluctant to do anything that will hurt me.  Is that lame?  My husband thinks so.  I would never utter my true feelings about skiing in front of my kids because I don't want them to be like me.  I want them to be fearless...in a responsible way.  Is that possible?  I am so proud of them for getting up on that mountain and heading down those black diamond slopes with no fear.  Mind you, we do not live in Colorado so these are small Pennsylvania mountains, but I'm impressed nonetheless.

    I give hubby all credit for nurturing a serious love of skiing in all three of my kids.  He is a rockstar skier and was an amazing ski instructor to them and me in the beginning. Now my ten year old zips down the mountain ahead of me.  Sometimes my daughter hangs back with me while I meander down the mountain, but generally they prefer some speed.

    Guess I'll be skiing alone from now on.  Or maybe hot chocolate by the fire?  No one will notice.

    Even though it's not super cold here I am still craving winter comfort foods like this Sausage and Bean Soup.  It's so hearty with the sweet Italian sausage, white beans and lots of veggies.  This can be made with pantry staples in about 30 minutes.

    Make a double batch and have it for lunch all week.  It's healthy and can easily be made gluten free - just watch the chicken stock and the sausage, making sure they are labeled gluten free.

    Ingredients

    • 1 tablespoon olive oil
    • 1 small onion diced
    • 1 cup diced carrots
    • ½ cup diced celery
    • 3 garlic cloves chopped
    • 1 9 oz package of sweet Italian sausage removed from casings. gluten-free if necessary
    • 2 can cannellini beans rinsed
    • 1 28 oz can diced tomatoes undrained
    • 1 32 oz box of chicken stock gluten-free if necessary
    • ½ teaspoon kosher salt
    • ¼ teaspoon fresh ground pepper
    • 2 teaspoon dried thyme
    • 1 bay leaf
    • Optional - parmesan cheese for garnish

    Instructions

    • Heat oil in a dutch oven over medium-high heat.
    • Add chopped onion, carrot, celery and garlic. Cook 5 minutes and remove from pan.
    • Add sausage and cook for about 8 minutes or so, crumbling as you go.
    • Add onion mixture back to pan, then add all remaining ingredients except parmesan cheese.
    • Bring to a boil and stir, then reduce heat to simmer and cook for about 10-15 minutes.
    • Remove bay leaf.
    • Serve hot with parmesan cheese and crusty bread for dipping.

      Ski club sounds like such a fun thing for kids. I definitely wish I had gotten in to skiing when I was little. I feel like taking it up as an adult when you are aware that you are breakable is just waaaay more difficult. 😉

      This soup looks amazing. It's cold and rainy out here in California and a bowl of this would be just perfect right now.

      I am not a skier either. I would be curled up in front of the fire with a bowl of this sausage bean soup and a good book. Nothing like a bowl of comfort on a cold day.

      Well, I just got back from Florida tonight Karen and this hearty, comforting soup would have been perfect! It's cold and rainy and downright dismal!
      Hope the temps get a little colder, so the kids can do ski club!

      Hooray for skiing! I didn't grow up skiing, but my kids are definitely into it! I hope your weather changes so you can get some more ski weather! This soup looks like the perfect apres ski meal! Hearty and nutritious....and delicious!

      Even though it is in the 70's here in Florida, I'm still a soup girl any time of the year and yours sounds delicious. BTW, I'll sit by you at the fireplace with hot chocolate and leave the slopes to others. 😀
