Is this not the most beautiful smoothie you’ve ever seen? Who wouldn’t drink something so beautiful? Dragonfruit, also known as Pitaya, is super healthy. It contains lycopene which helps protect against cancer and heart disease. It is naturally low in calories and high in fiber while containing vitamins C, B, Calcium and Phosphorous. Some even say it’s the next anti-aging fruit which helps tighten skin. Drink up ladies!
I love smoothies for the kids because they pack a lot of punch and sometimes I can even squeeze in kale or spinach. I didn’t do it in this smoothie because I didn’t want to change the brilliant pink color. Smoothies are so easy my kids makes them all the time. I always have frozen fruit and bananas and they like to make them for friends when they come over. I love that. I love that they are comfortable enough in the kitchen and know enough about nutrition that they can take the Vitamix and fill it with goodness.
Where do you find dragonfruit? Well, I got mine at Safeway in the frozen section. These bite sized cubes are the bomb of dragonfruit. They are already cubed and frozen so I don’t add any ice to my smoothie. I have yet to see a fresh dragonfruit in the grocery store but I’m sure there will be one at Whole Foods soon.
- 6 oz frozen dragonfruit cubes
- 1 banana
- 1 tbsp flax seed
- 4 oz filtered water or coconut water adjust to taste
- Throw all ingredients into a Vitamix and blend on high. Add more or less water depending on how thick you like it. You can also add a handful of spinach or kale but it will not be this brilliant pink color.
