Hey, guys! I hope you had a great weekend. We are getting into the Halloween spirit here in the Kelly house. The kids wouldn't have it any other way.
My daughter spent hours decorating her room with hanging bats and spiders and has Halloween lights everywhere. She and her girlfriends are all going as social media for Halloween. She has a Snapchat t-shirt and a yellow tutu. How cute is that?
My son headed out to Markoff's Haunted Forest on Saturday night. They waited in line two hours to go to this creepy haunted Halloween trail. There was no way I was going! It was full of zombies, chainsaw carrying creeps and a chapel full of the dead. Um, no thanks.
Remember when I said I was going to bring you a lot of quick, easy dinners? Well, I am true to my word!
I've made a Sheet Pan Chicken Stir Fry, Sheet Pan Sausage and Acorn Squash and Slow Cooker Mexican Chicken Soup. I didn't lie. I know what you need and I'm sharing all my favorite quick recipes with you. Don't worry I will sprinkle in some holiday goodies too like this
Today I bring you another quick, favorite dinner: Salmon Teriyaki made in the oven. The sauce is salty sweet and the salmon is light and flaky. Teriyaki sauce is a cinch to prepare and the salmon cooks quickly in the oven. You do have to dirty two pans, sorry! The sauce has to be simmered on the stove to thicken it.
Teriyaki sauce is a must have recipe for any quick prep kitchen. Using pantry staples to create this sauce means you can whip it up any night of the week.
You can use this on chicken, fish (try halibut) or pork. It's almost impossible to screw it up and you can adjust it to your taste. Teriyaki sauce is inherently sweet but if you prefer it less so, just use less brown sugar or sweeten it with honey.
Using tamari assures that it is gluten free.

Baked Teriyaki Salmon
Ingredients
- 4 pieces of salmon
- ¼ cup tamari or soy if not gluten free
- 1 tablespoon sesame oil
- 2 tablespoon brown sugar or honey
- 3 garlic cloves chopped
- 1 tablespoon corn starch
Instructions
- Whisk all sauce ingredients together in a small bowl.
- Place salmon in a bowl and pour marinade over. Marinate in the fridge for 30 minutes.
- Preheat oven to 400 degrees and spray a sheet pan with cooking spray.
- Place salmon on pan and cook for 14-18 minutes or until salmon flakes easily. (It helps to have equal sized salmon pieces.)
- Put all the marinade in a small pot and bring to a full boil. You must bring it to a boil before eating it since it was used on raw salmon.
- Turn to a simmer and cook until thickened.
- Brush on cooked salmon and serve.

Hi Althea, I haven't tried this with chicken. If you are using boneless chicken breasts, I would think around 15-20 minutes at 400 degrees. Or you could saute the chicken breasts in a skillet then top it with the teriyaki sauce. Hope that helps.

This recipe really works! The addition of the cornstarch in the marinade is a great idea. The resulting sauce is nice and glossy .
I added a little freshly grated ginger in the marinade. I served it on basmati rice and topped with sliced scallions and toasted sesame seeds.
