    This Watermelon Peach Smoothie will cool you down on these last hot days of summer. Fresh, hydrating and satisfying. {gluten free, whole30, paleo}

    Guess what?  Summer is not over yet!  Don't turn to apples and pumpkins just yet. Let's try to eek out every last drop of summer's fresh produce. Because once it's gone, it's a long time before we see it again.

    In comes the Watermelon Peach Smoothie!  It's the perfect end of summer cooler to use up those last juicy pieces of summer's seasonal produce.  

    Yes, school's back in, but who says we can't still celebrate summer?

    This is the easiest smoothie ever with only four ingredients.  It's super thirst quenching with all that watermelon.  Did you know that watermelon is 92% water? My fruit was well ripened so I didn't need any sweetener but feel free to add 1-2 tablespoon honey if your fruit is less than stellar.

    Ingredients

    • 3 cups chopped watermelon
    • 1 ripe peach sliced
    • ½ cup plain coconut milk refrigerated, not canned
    • handful of ice
    • mint for garnish

    Instructions

    • Put all ingredients into a high-powered blender and blitz until mixed.
    • Garnish with mint and enjoy!

      Sounds delicious Karen! I'm trying to pack in all the beautiful fruit before it pumpkins, pumpkins everywhere! I went to the market two days ago and there were mums and stacks of firewood outside! What?? I'll savor this smoothie instead of cozying up by the fire!
