I will take anything this week to make my life easier, like these Easy Chicken Drumsticks with Lemon. Sometimes you just need a slam dunk dinner that no one will turn their nose up at. For me, this is it. You can marinate the drumsticks overnight for extra flavor but it's not necessary. They taste great the next day as leftovers so send some in your kid's lunches (that is if they ever go back to school.) This could easily become a meal that you make every week with ease. The chicken marinates in a simple combination of olive oil, fresh lemon juice, and herbs. If you want an extra crispy crust on top, pop into the broiler on low after it finishes baking. I didn't do it in this case because it got pretty brown in the oven.

Easy Chicken Drumsticks with Lemon
Ingredients
- 10 chicken drumsticks skin on
- 4 tablespoon olive oil
- 3 or 4 garlic cloves chopped
- juice of 2 lemons
- zest of 1 lemon
- 1 teaspoon thyme
- salt and pepper
- lemon slices
Instructions
- Preheat oven to 400°.
- Mix all marinade ingredients together and add to a plastic bag with the drumsticks.
- Marinate for 30 minutes or overnight.
- Place chicken on a sheet pan.
- Place sliced lemons around chicken.
- Roast for about 30 minutes or until cooked through.
- Serve with rice, orzo or quinoa.
