I am so in love with my Instant Pot these days. I'm really trying to simplify my life, get rid of clutter and streamline my meal planning. I like to make dishes I know my kids will eat about 90% of the time and experiment with new recipes the other 10%.
I just read a great book that has helped me get my life in order and really have more time for the important things... it's called A Simplified Life and I highly recommend it. Most of it is common sense but I needed it all laid out in a neat and tidy book to get me to do it.
It was overwhelming at first to think about all the stuff I had to go through and all the items I needed to donate but it really frees up my mind for more creative and important endeavors!
Is my life totally in order now? Ha! No way but it's better. It's amazing to think about how much time we moms spend on the meals...from the planning, shopping, unloading, sorting, cooking and cleaning it must take up months each year!
Any way we can cut time off or streamline the process will give us back time to do other things that are more important. That could be hanging with our kids, date night with the hubs or reading a good book.

The Instant Pot really helps with this because it gives you slow-cooked flavor in 20 minutes. I know it's scary with all the pressure in there and you think it's going to blow up your kitchen but I promise it's safe. There is a learning curve and you can expect to ruin at least a few recipes before you get it right but it's so worth it!
Uh yeah, you are going to love this Instant Pot Curry Chicken! What's not to love about all that creamy, spicy sauce covering tender pieces of chicken? Even my kids eat it.
I serve mine with rice for the kiddos and cauliflower rice for me and the hubs. I'm telling you the cauliflower rice works to lower your carbs. You can't even tell when it's bathing in a flavorful sauce.

Instant Pot Chicken Curry
Ingredients
- 4 whole chicken breast, skinless, diced
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 tablespoon mild yellow curry powder
- 1 tablespoon red curry powder
- 1 tablespoon brown sugar
- 1 14 oz can light coconut milk
- ½ teaspoon ginger
- 1 teaspoon kosher salt
- ¼ tsp pepper
Instructions
- Heat Instant Pot to saute and add oil. Add diced onion and cook, stirring until they start to soften about 3 minutes. Turn off saute function.
- Add the diced chicken, all spices, and remaining ingredients and give it a good stir.
- Set Instant Pot to manual High Pressure and close the steam vent. Set timer for 5 minutes. (If you want fall apart shreddable type chicken set the timer for 10 minutes.)
- When the timer beeps, let the Instant Pot release naturally for 10 minutes then turn the valve to venting and carefully remove lid.
- Give it a good stir, and serve with cauliflower rice. Garnish with herbs.

Looks like one tasty recipe !I don't have an instant pot but I do have an electric pressure cooker so hopefully will come out just fine. I like that you've added a tip on thickening the sauce. I do find a lot of instant pot recipes have really thin watery sauces!
