Summer on a stick! These Strawberry Popsicles with Chocolate Drizzle are a huge hit when the weather gets hot. They are made with fresh strawberries, maple syrup, and coconut milk. {gluten free, vegan, dairy free}
It's not summer without popsicles! So, why not make your own at home? It's so simple and so much better for you than the ones loaded with food coloring and additives.
You can make them with just about any fruit, pure maple syrup, and coconut milk - that's it! All you need is this handy dandy popsicle mold. Or you can be super lazy and pour in lemonade or iced coffee for an afternoon treat on a hot day.
These Strawberry Popsicles are perfect when the berries are ripe in the summer. That's when the berries have the most flavor so you can get away with using less sweetener. If you aren't into the pure maple syrup flavor, you can add honey or agave. Just make sure that honey gets mixed in well. These would be equally delicious with raspberries, blackberries or blueberries.

Think of it like a frozen chocolate dipped strawberry on a stick. This chocolate drizzle is like vegan Magic Shell so watch out → Totally Addictive!
My healthier version of magic shell is made with Enjoy Life Vegan Chocolate Chips and coconut oil. That's it and trust me, you are going to be making this all the time. Once I showed my 12-year-old daughter, she started making it all the time and putting it on banana slices (daily).

Strawberry Popsicles
Ingredients
- 5 cups fresh strawberries, cut in half
- 2-3 tablespoon pure maple syrup
- ⅔ cup coconut milk, refrigerated
- 1 cup chocolate chips, I use Enjoy Life
- 1 tablespoon coconut oil
Instructions
- Add all ingredients into a blender and blend until completely pureed.
- Taste and add more or less maple syrup to taste.
- Pour into popsicle molds and add popsicle sticks. Freeze for at least 5 hours.
- Make chocolate drizzle by melting chocolate chips and coconut oil in the microwave in 30-second increments. Stir often.
- Remove popsicles from the mold by running the bottom part of mold under warm water. If the water is too hot it will melt the popsicles so be careful.
- Lay on parchment paper and drizzle with chocolate. Immediately place back in the freezer. When the are set you can wrap them in plastic wrap to store in the freezer.

Hayley, they can be tricky. I've found the best way is to run the molds under warm water, not hot. I have had them melt on the ends from water that is too hot!
