Almond Cake With Grapes

This cake is naturally gluten free and so moist and flaky.

  • 2 1/4 cups almond flour I use Honeyville
  • 1/4 tsp kosher salt
  • 2 tsp baking powder
  • 1 cup red I did not slice in half, but you can, seedless grapes
  • 1 tsp almond flavoring
  • 6 eggs
  • 1 cup granulated sugar


  • Preheat the oven to 325°.
  • Spray a 9-inch cake pan with cooking spray. You can also use a springform pan.
  • Whisk the flour, baking powder and salt in a mixing bowl.
  • In a stand electric mixer, beat the eggs and sugar for about 10 minutes. The mixture should get very thick. Add the almond flavoring.
  • Gently fold in the flour mixture in two batches. Add the grapes and stir just until blended. Do not over mix.
  • Pour into prepared pan and bake for about 40 minutes or until a toothpick inserted in center comes out clean.
  • When fully cool dust with powdered sugar and garnish with grapes.
