Almond Cake With Grapes
This cake is naturally gluten free and so moist and flaky.
- 2 1/4 cups almond flour I use Honeyville
- 1/4 tsp kosher salt
- 2 tsp baking powder
- 1 cup red I did not slice in half, but you can, seedless grapes
- 1 tsp almond flavoring
- 6 eggs
- 1 cup granulated sugar
Preheat the oven to 325°.
Spray a 9-inch cake pan with cooking spray. You can also use a springform pan.
Whisk the flour, baking powder and salt in a mixing bowl.
In a stand electric mixer, beat the eggs and sugar for about 10 minutes. The mixture should get very thick. Add the almond flavoring.
Gently fold in the flour mixture in two batches. Add the grapes and stir just until blended. Do not over mix.
Pour into prepared pan and bake for about 40 minutes or until a toothpick inserted in center comes out clean.
When fully cool dust with powdered sugar and garnish with grapes.
