    Indonesian Beef and Quinoa Bowl

    This Indonesian Beef and Quinoa Bowl will warm you up right away.  The beef is simmered in coconut milk with curry and cinnamon so it's full of flavor.  Top it with all your favorite toppings to get a healthy protein bowl that's perfect for meal prep.  {gluten free, dairy free}

    Aren't healthy one bowl meals the best?

    I love putting all the healthy goodness into one big bowl and mixing it around with a flavorful sauce, in this case, coconut milk flavored with curry and cinnamon.

    Yes, it's so good you'll be drinking any leftover sauce from the bottom of the bowl.  It's okay, no one's looking!

    Ground beef can get so boring - you know?  Tacos, spaghetti, cheeseburgers... week after week. Even my kids will say, mom, we just had spaghetti.  Yes, I know but I've run out of ideas.  It's no secret that my kids love beef so I've been experimenting with some new recipes to spice it up a bit.

    In comes this Indonesian Beef and Quinoa Bowl.  It's packed with warm spices from the red curry paste, cinnamon, and cumin.  I love cumin in all dishes!

    My kids like this served simply with a side of white rice and the toppers on the side.

    Why are kids so weird this way?  I mean heaven forbid I put the cucumbers on top of the meat and they are touching.  Eww!

    I love making a big batch of this beef with grass-fed meat and leaving it in the fridge for healthy salad toppers all week.  I almost always have a salad for lunch and try to mix up my protein to get variety.

    Ingredients

    • 1 lb ground beef or turkey
    • 1 14 oz can of coconut milk, well shaken
    • 2 tablespoon red curry paste (gluten free)
    • 1 teaspoon cinnamon
    • 2 teaspoon cumin
    • 1 tsp salt
    • cucumber slices
    • carrots, shredded
    • ½ lime, juiced
    • 1 teaspoon sriracha
    • ½ cup quinoa, cooked

    Instructions

    • In a medium-sized pan cook ground beef until no longer pink over medium-high heat.
    • Lower heat and add coconut milk and spices.  Stir and cook on low until blended.
    • Pour beef into a bowl and top with garnishes.  Make sure to get some of the yummy sauce in there too!

      Looks delicious and I plan to make it this weekend! But please note that the nutritional information is not correct here. I've created the recipe in a food app using 90% ground beef and without the quinoa, I'm getting about 277 calories per serving, as this recipe serves 6. Haven't added in the quinoa yet but can do the separately. Thank you again! I'm super excited for this!

        Thanks so much for your comment. I did not add the quinoa into my nutrition/recipe app. Not sure why we would be getting different calculations bc I did specify 90% ground beef and canned full fat coconut milk. Hope you enjoy it!
